Chocolate Marble Madeleines | wildwildwhisk.comI woke up early today (6 am!) to actually do work, but there were only about 3 people online and no one from my project… Sometimes it feels so nice and quiet when I start work early, unless I have a pressing question and no one is around to answer. I don’t think I’ve shared much about what I do for a living on the blog, may be a sprinkle here and there. I’ve been planning to update the ABOUT section since the start of the year. New year new about section kind of thing, but for some reason, the days just keep slipping by. And then all of a sudden, I need to start thinking about Valentines recipes.

I actually have a pretty awesome job I think, considering it’s in engineering and it can be unstable as the stock market. I work from home for a small company, with only about 25 or so full time engineers and everyone works from home, from across the US 🙂 . The best part is my commute, takes about 5 seconds to get to my office 😉 . It beats commuting in and around LA for an hour back and forth for sure. It frees up my time for a lot of things I would have never been able to do, like blogging and day dreaming about chocolate marble madeleines! Well yes, like these!

I now have lazy Chihuahuas as officemates, I do all the work, they just take naps between supervising. But it’s a good kind of struggle to find balance. And when all else fails, there are always madeleines!

I guess I should tell you about these chocolate marble madeleines before we get to the recipe. They were developed based on my Vanilla Madeleines. You’ll need to make two batters, one vanilla and one chocolate. Bake them together, and voila, chocolate marble! Easy peasy! And if you don’t want marble, you can make chocolate or vanilla, whatever you feel like. Hope you enjoy these!

Ingredients
For the vanilla madeleines
  • 1 large egg
  • 1 large egg yolk
  • 3 oz unsalted butter – melted and cooled
  • 1/2 cup granulated sugar
  • A pinch of salt
  • 1 teaspoon pure vanilla extract
  • 2/3 cup all-purpose flour
For the chocolate madeleines
  • 1 large egg
  • 1 large egg yolk
  • 3 oz unsalted butter – melted and cooled
  • 1/2 cup granulated sugar
  • A pinch of salt
  • 1/2 teaspoon pure vanilla extract
  • 2/3 cup minus 2 tablespoon all-purpose flour
  • 2 tablespoon cocoa powder (any kind)
Other
  • Extra melted butter (1 tablespoon) and flour for the mould
  • Powder sugar for dusting
  • Special equipment: regular size madeleine pan, 12 cup
Instructions
For the vanilla madeleines
  1. Melt the butter in a small sauce pan (or in the microwave) and set aside to cool.
  2. Add the egg and egg yolk to a medium mixing bowl and beat together.
  3. Add sugar, salt and vanilla to the egg and beat until light in color and creamy.
  4. Fold the flour into the egg mixture, half at a time, until combined.
  5. Fold in the melted butter, working quickly as not to over mix.
  6. If using a stand mixer bowl, scrape the batter into a different bowl and refrigerate.
For the chocolate madeleines
  1. Melt the butter in a small sauce pan (or in the microwave) and set aside to cool.
  2. Add the egg and egg yolk to a medium mixing bowl and beat together.
  3. Add sugar, salt and vanilla to the egg and beat until light in color and creamy.
  4. Shift the flour and cocoa powder together, fold the flour mixture into the egg mixture, half at a time, until combined.
  5. Fold in the melted butter, working quickly as not to over mix.
  6. Refrigerate the batter while the oven is preheating.
  7. Preheat the oven to 375°F.
  8. Brush the extra melted butter onto the madeleine mould, wipe off any excess pool of butter. Sprinkle the mould with flour, shake off the excess.
  9. Spoon about 1 tablespoon of vanilla batter and 1 tablespoon of chocolate batter in each madeleine cup, don’t flatten the batter, it will spread in the oven.
  10. Bake for 14 minutes, a toothpick inserted in the middle should come out clean.
  11. Remove from oven and transfer to a wire rack to cool.
  12. If you only have one pan, repeat steps 8 – 11 for the remainder of the batters. This recipe will make 24 madeleines.
  13. Serve with a dusting of powder sugar.
