What I really want right now is some chocolate cake! But all I have for you are some baked green tea donuts with chocolate ganache. I suppose chocolate ganache will do. I made these the same week I made those. If I could have baked all week that week, I would have made a bazillion Matcha green tea treats, until I run out of Matcha powder. But you know what happened then, sprained ankle, can’t walk, can’t even stand etc etc… and no treats for weeks. 🙁 That is the real tragedy here!
After thinking about these donuts long enough, I’m starting to get a craving for donuts. Funny how the tummy works, I think it’s cuz I’ve been deprived of treats for so long. I know I said it as if I haven’t had any for years, while it’s only been weeks, except the occasional ice cream. But that’s in a completely different category. You know how they say you shouldn’t go grocery shopping while hungry; I think the same holds true for writing a food post. Now I can’t stop thinking about donuts and cake and ice cream…
In all honesty though, these donuts are not really donuts even though they look like donuts. They still taste like cake, so they’re cakenuts, definitely not greasy enough 😛 . But they’re fun and cute and somewhat healthier for you. Especially these cuz I made them with whole wheat flour and a lower dose of sugar since I figure the chocolate ganache will give you all the sugar you need. They’re easy to make and there’s no mess to clean up (there is never a mess if you know where to hide it!)
The green tea flavor in these is very subtle, to me at least. If you like stronger tea flavor just increase the amount of Matcha powder in the recipe. Have fun and enjoy!
Baked Green Tea Donuts with Chocolate Ganache Recipe
Baked Green Tea Donuts with Chocolate Ganache is a quicker, easier and healthier version of one of our favorite grab and go sweet treats that we can eat for breakfast.
- 1 cup white whole wheat flour
- 1 tablespoon Matcha green tea powder
- 1/2 cup granulated sugar
- 1/4 teaspoon kosher salt
- 3/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 large egg
- 1/2 cup buttermilk
- 1/4 cup vegetable oil
- 1/4 teaspoon pure vanilla extract
- Nonstick spray (oil or butter for donut pan)
- 1/2 cup heavy whipping cream
- 4 oz semisweet chocolate chip
- 1/2 tablespoon unsalted butter
- Preheat oven to 350°F.
- In a medium mixing bowl, add the egg, buttermilk, oil and vanilla extract, beat to combine.
- In a small mixing bowl, sift together flour, sugar, Matcha green tea powder, salt, baking powder and baking soda, or just mix with a wired whisk.
- Slowly add the flour mixture to the liquid with the mixer on low speed.
- Spray, oil or butter the donut pan cavities.
- Spoon about 1/4 cup of batter into each cavity; try to distribute the batter evenly in the ring shape cavity.
- Bake for 12 minutes until a toothpick inserted in the middle of donuts comes out clean.
- Remove from the oven and flip the pan over on top of a wire rack to remove the donuts from the pan and let them cool on the wire rack.
- For the ganache, add the chocolate and butter to a heat proof bowl.
- Bring the heavy cream to a simmer in a small sauce pan over medium heat, remove from heat and pour it over the chocolate. Allow the mixture to stand a few minutes until the chocolate softens.
- Whisk the hot cream and chocolate mixture gently until smooth and shiny.
- Dip one side (or both sides) of the donuts into the ganache, twist it around gently to get as much ganache on the donuts as you’d like.
- Store in an air tight container, they will last for a few days.
