First, toast a hand full of coconut chips in a skillet over medium heat until the edges are golden brown and the smell is toasty.
Put 1 banana, 1 cup pineapple and ½ cup of coconut milk in the blender and blend until smooth.
Pour smoothie into a bowl, garnish with slices of fresh or frozen banana and toasted coconut chips.
Serve immediately.
Notes
I use a Ninja blender with the cup attachment.
If you use canned coconut milk, the smoothie will be creamier but higher in calories.
To make life easier on your blender, if you're using frozen bananas, use fresh pineapple and vice versa. You can use all frozen fruits but your blender may have a harder time blending and you may need to add a little bit more liquid to help it out.
