Lemon Dutch Baby For Two Recipe Tips and Tricks
- A blender or a food processor makes blending up the batter for this Lemon Dutch Baby a breeze.
- Always add citrus zest directly to the sugar, mix it well with a whisk or rub with your fingers to release the essential oil. This step is my favorite since it’s like getting aromatherapy.
- Preheat your cast iron skillet or another oven proof skillet to ensure even heating.
- I like my dutch baby on the thicker side, so I use an 8” skillet. You can use something a bit larger to get thinner dutch baby, 9” to 10” at the max.
While you’re waiting for this lemon dutch baby to cook in the oven, you can prepare all the other sides to serve for brunch. Cut up your strawberries, get your lemon curd ready, and if you want, you can make some homemade whipped cream as well. Lemon Dutch Baby for Two
Ingredients
For the dutch baby
- 1/2 cup all purpose flour
- 3 tablespoon granulated sugar
- zest of 1 lemon
- 1/8 teaspoon kosher salt
- 2 large egg
- 1/2 cup whole milk
- 1/2 teaspoon pure vanilla extract
- 3 tablespoon unsalted butter - divided
For toppings
- Lemon curd
- Fresh strawberries
- Powder sugar
Instructions
- Preheat the oven to 425ยฐF along with the cast iron pan.
- Melt half of the butter in the microwave for 30 seconds.
- Add sugar and lemon zest to a small mixing bowl and mix together with a whisk or rub with your fingers to release the lemon oil.
- In the same bowl, add flour and salt and mix together thoroughly with a whisk.
- Transfer the flour mixture to a food processor, and add eggs, milk, vanilla and the melted butter.
- Process until everything is thoroughly combined, about 30 seconds to 1 minute.
- Add the rest of the butter to the hot cast iron pan, swirl around to coat the bottom and the side completely.
- When all the butter has melted, add the batter to the pan and put it back into the oven.
- Bake for 20 minutes without opening the oven door to allow the dutch baby to completely puff up.
- Serve with fresh berries, lemon curd and powder sugar.

Just made it for breakfast this morning! Turned out delicious with the lemon curd! I ran out of milk so I substituted that with 1/4 cup heavy cream + 1/4 cup water, still perfect! So easy to make! Thank you!
Hello I donโt have a cast iron pan like yours could you tell me what else can I use instead.
Hi Shaima, a nonstick cake pan can probably work, or pan that you can put into the oven. The important thing here is that you need to preheat the pan and also use something that you dutch baby won’t stick to. The pan I used is about 8″ or so in diameter so you’ll need something similar in size. Note that many nonstick cooking pan cannot be put into the oven because of the nonstick layer so make sure what you use is oven, high heat proof.
Honestly, I regularly do this with a smaller pie plate and it works just fine.

20 minutes was just a bit too long in my little countertop toaster/convection oven, so my top was burned. Honestly, though, it was still amazing! Just a bit shorter next time and Iโll have this baby downโthanks for sharing! ๐

Made this this morning. Even though I messed up the recipe, it still turned out amazing. At step one, please add โset asideโ. I added the sugar and zest to the melted butter ๐คฆ๐ผโโ๏ธ It puffed up 5โ and settled nicely. I made lemon curd and added sugar soaked strawberries and fresh blueberries.
