I’m taking advantage of delicious fresh blueberries once more before summer is over to make these super quick and easy Blueberry Popsicles. And you can totally eat these for breakfast because they’re made with fresh fruit, coconut yogurt and maple syrup, sprinkled with some homemade granola (optional but it makes them more breakfast-y).

How to Make Blueberry Popsicles

You’ll need a food processor or blender to blend the blueberries up with the maple syrup until smooth. Then mix it with the yogurt. I used unsweetened coconut yogurt and swirl the blueberry mixture slightly in the yogurt to get speckles of blue and white. But if if you mix it completely you’ll get a more even distribution of sweetness. Taste the mixture to make sure you’re okay with how sweet it is, or add more maple syrup to your taste.

How to make Blueberry Popsicles

This recipe makes just enough to fill 6 Ikea popsicle molds, which holds about 2 oz of liquid each. I substitute wooden popsicles sticks because I like the look of them, but you don’t have to. Since the yogurt mixture is pretty thick here, I inserted the popsicle stick right away before popping them into the freezer. If using these popsicles stick with a thinner mixture, you’ll want to freeze it half way before inserting the sticks so they stay upright.

Blueberry Popsicles {Blueberry Parfait Popsicles}

These easy Blueberry Popsicles are made with four ingredients, no refined sugar and take just a few minutes to throw together.

Freezing Time: 4 hours
Total Time: 10 minutes

Equipment

Ingredients 

  • 6 oz fresh blueberry
  • 2 tablespoon maple syrup
  • 6 oz coconut yogurt
  • A handful of granola, optional

Instructions 

  • Wash and dry the blueberries.
  • Add blueberries and maple syrup in a food processor and blend until smooth.
  • Add blueberry mixture into a bowl with coconut yogurt and swirl together.
  • Divide mixture into 6 popsicle molds and top with some granola if desired.
  • Add popsicle sticks and freeze until completely frozen.
  • To remove popsicles, run the mold under water for 10 seconds to loosen.

    I’ve never had a popsicle for breakfast but this is the perfect excuse to try. Now that you mention it, they sound perfect for a hot morning. It’s like a frozen smooth but you can eat it on the run. Love these.

    Would sugar-free maple syrup interact poorly with the other ingredients?

      Maple syrup is used as a sweetener and for flavor. You should be able to substitute sugar-free version without any problem, but the taste may be altered.
